While looking for lunch ideas, I decided to try out Money Saving Mom's post about corndog muffins. I didn't have honey on hand to make her cornbread recipie, so this is what I did.
Cornbread:
1 c cornmeal
1 c flour
1/2 c sugar (or decrease to 1/4 for less sweet. I put in an amount somewhere inbetween.)
4 tsp baking powder
1/4 tsp salt
2 eggs
1 c milk
1/4 c vegetable oil
Combine all ingredients (just enough so it's all mixed).
Then I poured it in glops in 18 *greased* muffin tins. I cut up 5 hot dogs into 1/4" circles and jabbed about 4 hotdog pieces in each muffin tin. (Next time, I might try doing the pour some batter in each, add the hotdogs, add more cornbread batter on top. But my cornbread batter gets "airy" from the baking powder fairly quickly, so I might not...)
Bake at 400 degrees for 20-25 minutes.
We ate about 3 each and then I put the other 12 in a gallon freezer bag for lunches. This will be a repeat for us! Greg wasn't sure he had ever had a corn dog, but these passed his critique.:)
I tried this idea this evening using a cornbread box mix and cocktail frankfurts. I thought they came out ok--nothing great, but certainly good enough. Maybe a sweeter cornbread recipe would've been better. For unknown reasons, TGM entirely refused to eat her corndog muffin until JM brought home a Chic-Fil-A Peppermint Milkshake to share. Then her muffin disappeared quite promptly.
